Baby Soft Rice
Short-grain rice simmered with plenty of water and a little pumpkin collapses into a spoonable, glossy mash that holds its shape on a spoon and cools quickly for a small child.
About this dish
Baby soft rice is less a recipe than a ratio: far more water than you would use for table rice, and enough time for the grains to lose their shape entirely. The pot makes a soft, steady ticking as bubbles break the surface, and the smell is faintly sweet, like clean steamed grain. A small piece of pumpkin melts in and turns the bowl the palest orange. Aim for a texture that slides off a tilted spoon in one slow fold, with no distinct grains left.

Method
7 steps · tick each one off as you finish it.
Rinse the rice
Rinse 120 g of rice in a sieve under cold water for 60 seconds, swishing until the runoff runs clear. Off the heat, let it drain for 2 minutes; you know it is ready when the grains look chalky and no drips fall.
Combine and bring up
Combine the drained rice, 900 ml of water, 80 g of pumpkin and 1 tsp of oil in a pot over medium heat. Heat for 8 minutes until fine bubbles ring the rim and a sweet smell rises; the surface should just tremble.
Simmer gently
Lower the heat to low once it trembles, then cover and simmer for 30 minutes, stirring 1 tbsp of water in every 10 minutes. You can tell it is ready when the pumpkin collapses under a spoon and no whole grains remain.
Mash the pumpkin
Mash the softened pumpkin against the pot with 2 tbsp of water for 1 minute over low heat, until the orange streaks fade into an even pale colour. Call it done when a spoon drawn through leaves a slow-closing channel.
Season if needed
For an older child, dissolve 1/4 tsp of salt in 2 tbsp of the hot rice off the heat for 30 seconds, then fold it back through. You will see it is ready when no pale grains of salt sit on the surface.
Rest off the heat
Turn off the heat and let the pot stand covered for 5 minutes; the residual steam finishes the last firm grains. You can tell it is done when 1 tbsp pressed on top holds a soft peak that slowly slumps rather than staying stiff.
Smooth and serve
Spoon 150 g into a shallow bowl off the heat and smooth the top with a wet spoon for 20 seconds until glossy. This is the point to stop: after 3 minutes of cooling, it slides off a tilted spoon in one slow fold.
Tips that matter
- Use short-grain rice rather than jasmine; its higher starch breaks down into the smooth, spoonable texture a small child can manage easily.
- If the surface forms a skin while it rests, stir in 1 tbsp of warm water off the heat for 15 seconds to bring back the gloss.
Easy variations
- Replace the pumpkin with 60 g of finely grated carrot, added with the water for the same gentle sweetness and a paler orange colour.
- Stir 40 g of plain cooked white fish flakes into the finished rice off the heat for a soft, protein-rich version.
Questions that come up
Why is my soft rice gluey instead of smooth?
The heat was likely too high, so the outside of each grain burst before the inside softened. Keep it at a bare simmer over low heat and stir in 1 tbsp of water every 10 minutes to keep the texture even.
Can I make this in a rice cooker?
Yes. Use 120 g of rice with 900 ml of water and the pumpkin, run the porridge cycle if you have one, then stir well and rest 10 minutes off the heat before serving.
