The technique manual

Read this once, use it for years

Six short notes on the principles that repeat across the recipes: water ratios, dough hydration, boiling, fermentation, cupboard storage and cooking staples a second time.

Why a manual alongside the recipes?

A recipe tells you what to do with one dish. A principle tells you what to do when the recipe goes slightly wrong — when the rice is firm on top, when the dough keeps shrinking back, when a sauce refuses to cling. These notes collect the handful of ideas that show up again and again across the recipe handbook on this site.

They are deliberately short. Read the one about rice and water before the rice chapter, or the one about dough before you attempt steamed buns. The rest are there when a particular step stops making sense.
